Pizza Perfect!

Is there any food out there more delicious than pizza and diverse than pizza?  The answer is unequivocally, “NO!”

Recently I took a class on how to make “Perfect Pizza at Home.” In this class, I learned how to make pizza dough from scratch and I learned 3 different pizza concoctions that were absolutely amaze-balls.

Do’h, I mean Dough

Let’s start with the dough.  For the dough, we activated yeast with honey and room temperature water. then we created a well in the the flour and poured the yeast into the center.  From there, we kneaded the dough until it was well incorporate.  Then we let it rest.

Once the dough has rested, you take the ball of dough and shape it into a classic pizza shape.   Since the class was only two hours, we used dough made by the instructor to actually make our pizzas. We took the dough we made in class home.

Why are the classics always so good

The first pizza we made was margherita pizza. For this pizza, the dough was shaped into an oblong pie. We took skinned plum tomatoes and blended them in a food processor until they were smooth.  We then grated some garlic into the tomatoes with a microplane.  The who plum tomato was sliced and the basil was torn/sliced. Next we assembled our pizza. A layer of sauce, then a layer of mozzarella. The basil is gingerly spread across the pie with the tomato slices gently laid across the top. Into the oven she goes.

The result was a crispy melty classic slice of margherita pizza.  YUM!

Kale, Sausage & Caramelized Onions Pizza

For this pizza, the instructor had prep the caramelized onions ahead of the class.  The onions included raw onions, olive oil and salt cooked low and slow until golden brown. In addition to this, the pizza contained mozzarella, raw kale, italian sausage, and a little squeeze of lemon juice.

The caramelized onions on this pizza added the perfect sweet flavor note.  This paired well with the savory flavor from the sausage, the slightly bitter taste of the kale, the creaminess of the mozzarella and the acidity of the lemon. YUMMY!

Bacon, Onions, Rosemary, Potato & Pecorino Pizza

Let’s me start by saying EVERYTHING is better with bacon and this pizza did not disappoint.

To prepped this pizza, slice the bacon and then cook it to render out some of the fat.  Chop the onions and rosemary, Use a vegetable peeler to create thin slices of potato. Shred the pecorino.

The flavor on this pizza was breathtaking.  It was so good, I literally did not want to stop eating it. This pizza was the absolute best.  I wish it was possible to pull this pizza into reality from these images.  YUMMIEST!

I would highly recommend learning how to make pizza dough. Once you have this skill, the sky is the limit for the types of pizza concoctions available at your fingertips.
